Marc Hébrart started producing champagne in the Valée de la Marne in northeastern France in 1964. Working with mostly Pinot Noir followed by a small percentage of Chardonnay and Pinot Meunier grapes, he managed 14 hectares of vines scattered across six villages that include premier crus villages of Mareuil-sur-Aÿ, Avenay, Val d’Or, and Bisseuil, and grand crus villages of Aÿ, CHouilly and Oiry in the Côte des Blancs. Twenty years later, his estate, located in one of the highest rated Premier Cru villages, was included in the Club de Trésors (Special Club), an association that promotes quality wines.

 

In 1997, when Marc retired, his son Jean-Paul took over operations, practicing sustainable farming methods. Each parcel of vines is vinified separately to show their distinct individual character. He has also been experimenting with vinifying in barrels versus glass-lined steel tanks and using indigenous yeast fermentation for some of the older vine lots.
